Probably one of the hardest parts about adulting is having to cook yourself dinner on the regular. I usually get off work later, especially during this time of the year (audit busy season), so I’m big on quick dinners.
I love this shrimp pasta recipe because it takes just 25 minutes but has a restaurant-quality taste. Not to mention, it can easily be adjusted based on what you already have in your pantry.
Garlic Butter Shrimp Pasta with Sun-Dried Tomatoes
An easy dinner recipe that includes two fan-favorite ingredients, shrimp and pasta! Not to mention this oh-so-good dish pairs great with a glass of wine.
Ingredients
- 1 bag medium shrimp, peeled and deveined
- 1/4 cup spinach
- 1/4 cup sun dried tomatoes
- 8 ounces pasta of choice
- 1/2 cup alfredo sauce
- 2 tbsp butter
- 2 tbsp minced garlic
- 1/4 cup shredded parmesan cheese
- paprika
- parsley
- pepper
- salt
Instructions
- Using a saucepan, bring heat to medium. Drizzle pan with olive oil and place shrimp into pan.
- Season shrimp with parsley, paprika, salt and pepper as desired. Add minced garlic to pan.
- While shrimp is cooking, bring water to a boil in a medium-sized pot. Add in pasta and cook per packages' instructions (typically about 8-10 minutes).
- Bring the heat on the saucepan to a simmer and add in the butter, sun-dried tomatoes, spinach and alfredo sauce.
- Allow the sauce to simmer for about 3 minutes.
- Add in parmesan cheese and stir until cheese is well combined. If the sauce becomes too thick, add a tbsp of water at a time to loosen.
- Allow the sauce to simmer for another 3 minutes.
- Drain the pasta, then top with the sauce and a dash of parmesan cheese.
